Halloween Spooky Eye Crispie Pie

Ingredients (makes 12)

50g Rice Crispies
1 jar of JimJams 83% Less Sugar Chocolate Spread
100g desiccated coconut (unsweetened)
1 punnet of raspberries
1 packet of edible googly eyes (or no added sugar mini marshmallows)
3 tbsp of honey (or honey substitute)


Remove lid from JimJams 83% Less Sugar Chocolate Spread and place in microwave for 30 seconds.

Pour the rice crispies, coconut, honey and chocolate spread into a bowl and mix until well combined.

Scoop the mix into a square tin and flatten firmly. Score into 12 pieces and scoop out a very small amount from the middle of each section (where each raspberry will be placed).

Dip twelve edible googly eyes into a crushed raspberry to give a blood shot eye ball effect. If using mini marshmallows, you will have to create a dot to represent the pupil with a chocolate pen. Push an eye into each raspberry and place into the holes you created in the crispie mix. Press firmly around the raspberry to secure.

Place in the fridge until the crispie mix is firm and holds together.

Remove from fridge and cut along your scored sections to produce 12 individual sore eye crispie pies!
